Wash the cherries, remove the seeds and sprinkle with a little sugar.
Heat the oven.
Separate the yolks from the whites. Rub the yolks with a non-metallic cloth together with the sugar, adding one spoon at a time. Then add flour, spoon by spoon, mixing the composition from bottom to top.
Whisk the egg whites with a pinch of salt and a teaspoon of lemon juice and mix in the yolk composition lightly with a non-metallic cloth.
Separate half of the composition in which 2 tablespoons of cocoa are added
Put a baking paper in a small rectangular tray, add the cocoa composition, then the white one and the cherries on top.
Leave it in the oven, on medium to low heat for about 30 minutes, until it passes the toothpick test. Remove the tray from the oven and leave to cool, then pour the dark chocolate icing that I made by melting the dark chocolate in a bain marie together with the syrup left by the cherries when I put them in a bowl with sugar.
