This yummy no-bake cheesecake only needs four ingredients but is sure to please your family and friends. Make six individual mini cheesecakes, or make one larger one.

  • 230g digestive biscuits
  • 30g butter
  • 200g white chocolate, chopped
  • 250g ricotta cheese

  1. First crush the digestives down to a fine crumb, this can be done using a blender or in a food bag and beating with a rolling pin.
  2. Melt the butter and mix into the biscuit crumbs, share the mixture out between 6 ramekins or place all into one cake tin. Press down and place in the fridge.
  3. Using a Bain Marie (bowl placed over pan of simmering water) melt down the chocolate.
  4. Whilst chocolate is melting place ricotta into a bowl and whisk to further soften it.
  5. Gradually fold the melted chocolate into the cheese. Once combined, spoon the mixture over the biscuit base.
  6. Return to the fridge allowing 1 1/2 to 2 hours to set before serving.


You could add some grated milk chocolate and/or fresh raspberries to the top for decoration.

Yummy, but I had to double the amount of butter, and the topping was a bit sparse for a large one.-30 Jul 2017

I followed the recipe to the letter but there is definitely not enough butter to bind that quantity of biscuit. I tried it out before making for guests and the base just crumbled and just needs more butter. So maybe double the quantity shown of 30g to 60g.-11 Dec 2016

It was a yummy cheesecake, however it could have done with another slab of white chocolate as couldn't taste it much. We used hobnobs for the base which was really nice although needed a bit longer to set-15 Jun 2014
