We wash the apples and peel them. Take the middle of the apple out together with the seeds. We fill the middle with the cherries drained of juice and without seeds (I also had corcodle compote) and we place them on a plate.

Caramelize the sugar in the tray that we will put in the oven and grease the walls of the tray with the caramelized sugar. We take the tray off the heat and place the apples nicely in the tray.
